What is the best way/recipe to prepare goose? I haven't been able to find a good way yet. Any good recipes?

Just Use Any Turkey Recipes! Use A Cooking Bag So It Does Not Dry Out. Use Some Kind Of Marinade Or Inject It!

I have got lazy in my old age. I have snap lid buckets in the chest freezer. I breast and leg all my ducks and geese and through them in the buckets. At the end of the season I take them in and have summer sausage and pepperoni made. It's very good.

If you have breast meat from a goose I have found that treating it like a steak instead of a bird is better. On of my favorite ways - especally for yooung goose - is to slice it into steaks (lengthwise of the breast). Place a little oil in the old iron skillet and heat it up. Dredge the pieces of goose in some seasoned flour ( some salt and pepper - maybe some cajun or Emeral's seasoning) and place into hot oil. Brown. Then to finish it off I take some Burgundy wine and pour some in and let it simmer until done. You can reduce the pan juices for a little treat. Goodluck.

Just cooked a goose breast last night. After letting the breast braise for a bit and near finished cooking I added a little orange marmalade to the top! This is great! Try it on anything from chicken to pork and even deer.

I'm with WECoyote,

We have also been doing this for a few years now, Pepperoni, summer sausage and breakfast sausage links. Also, you could cube the breasts 1 inchx1 inch, cover with milk overnight( draws out the blood). Rinse and marinate in Spicy Italian salad dressing for a few hours, Then skewer them with alternating whole mushrooms, red onion, green, red or orange peppers and last but not least BACON.

Most important is that you only cook them till the BACON is done. That puts the goose at medium rare.
