I was wondering what was some of youall's favorite Elk burger recipes?

I'm pretty basic when it comes to elk burgers. I enjoy the flavor of lean elk meat, so I don't really season my burgers other than a pinch of salt and pepper on each burger. I know most people add in 10% beef fat when they grind the meat because elk is so lean and can make some dry burgers. I don't really like to do this though, I add 1/2 tsp of corn starch for each 1/4 lb burger, and leave the meat lean. This works well to keep the ground elk from crumbling and falling apart. To keep the burgers juicy, I make them fat (like a hockey puck, not a flapjack), and don't cook past the rare side of medium-rare. Good stuff!

Sounds good. I am looking for a recipe that would use elk burger in it, not neccessarily how to make elk burger. But thanks for the recipe.

Ok, I get it now. Here's an easy one to free up some freezer space:
Italian Stuffed Pasta Shells
Boil 1 package extra large pasta shells until soft, then set aside.
Brown and drain 1 lb ground elk meat
Add 1/2 jar of your favorite spaghetti sauce. This should make a very meaty mixture, and should be meatier than anything you would put over spaghetti.
Fill shells with meat mixture and top with mozzerella cheese. Put the stuffed shells on a cookie sheet and bake at 400 deg. until cheese is melted (5-10 minutes).
Another idea is to just find a good meatloaf recipe and use elk meat instead of ground beef.

Chavez Chavez are you worried I am going to contest against you? I am just looking for something different to do with it. I kinda tied of makeing it into hambugers and meatloaf.
