Anyone ever made Comfie (Not sure of the spelling) It kind of intrigues me. Baking something in oil all day. Just wondering if you guys had any thoughts.

When I first heard it I thought he was saying "Combed feet" (real fast)so thiers your pronunciation. Finally I actually saw Emiral make it. He cooked duck legs in deep olive oil for quite some time. then pulled them out (the meat was falling off the bone) dredged them in corn meal or something like that, and shallow fried the legs to get crispy. Or I guess you can use the meat in just about any dish that requires really tender meat. I was wondering if anyone has had this, and hows it taste.

You're talking about one of my favourites, duck confit (approximately pronounced "conefee") It's great stuff. Basically it involves cooking duck legs (thighs attached) in duck fat and then preserving it in the fat. Other parts of the duck are used as well but I've usually just had the legs and thighs. I can get it at my local butcher here in Ottawa, Canada but it shouldn't be too hard to find in most larger cities and towns. You can either bake it or just fry it up in the pan. It is sooooo good particularly when served as I do it with oven roasted potato wedges and braised red cabbage. Washed down with a really nice Pinot Noir (designed for duck) and you couldn't ask for much better. Another source are farms and game ranches etc. that specialize in goose, duck products. A good place in Eastern Ontario is Mariposa Farm. They also have a web site. Madawaska.

Thanks, hopefully I'll get to try this recipe with my own harvest this coming season. The thing I was really concerned about was how oily or greasy it was. Don't get me wrong, I dont think greasy is always a bad thing, but too greasy, well...
I'll give it shot. I wonder how much duck fat you have to buy? Or is there enough fat on wild ducks to do this?
