I call it the ultimate breakfast!

What you will need:

1/2 antelope summer sausage stick.( also works with regular sausage if you dont have any antelope retily available)
1/2 bag of shredded hash browns.
1 tsp of lemon juice.
4 tbsp minced onions.
4-5 eggs.
large skillet
vegetable oil
cheese( not needed I just like to add cheese)

Directions:

Alright you begin by adding enough vegitable oil to coat the skillet. Turn on heat at high. wait 3-5 minutes or until hot. Add the 1/2 bag of shredded hash browns and cook until light brown. Add the antelope summer sausage and cook thoroughly. Add the 4 tsp of mincd onions and stir. after all this is completed add the eggs( NOTE: you will want to stir the eggs in a cup before adding.) After the eggs have cooked add the 1 tsp of lemon. stir around mixture till all the eggs are cooked in the skillet along with everything else. Add the cheese not alot! only half a handful. once cheese is melted take skillet off heat and ENJOY! thats all!

We make almost the exact same thing except we don't throw in any lemon juice and use a chunks of hot-n-spicy Jimmie Dean bulk sausage. Started mixing in some green pepper last year. Good way to start the day.

I like the zest of the lemon juice. I agree perfect way to start the day if you have the time to make it. Yeah I always used it with bacon or sausage. and when I got my antelope I decided to try it and it was very good.
