This was a recipe that was thrown together at a Boy Scout campout and into a Large cast iron skillet. Mrs. Klock didn't care for the name and refused to eat it. It's delicious and everyone else loved it.
Easy to make and great for a campout. It is great, in order to clean out leftovers, before going home for the weekend, not to mention hearty and sticks to the ribs.
Here it is.
1 dozen eggs, right from the country farm stand is best
1 pkg/lb of frozen/fresh/leftover potatoes, not mashed
1 lb of ground/shredded venison/ beef/ pork, not for the vegan
1 lb of some kind of shredded/sliced/chunked cheese(s)
1 onion chopped and/or green pepper browned or raw
salt, pepper or seasoning
Fry up and/or cook the meat in the Large cast iron skillet. Add enough butter/oil to keep everything from sticking to the skillet.
Stir in the potatoes and cook with the meat.
Next, crack all the eggs over it and stir into meat and potatoes, scramble it. Remember to keep it off the bottom of the pan.
As soon as the eggs are cooked into the mixture, to your likings, yellow to light brown, stir in the cheese.
Take it off the fire and cover it until ready to serve.
This is best, on a winter campout, when the water from the evening clean up has frozen in the pans and no one wants to come out of the tents to restart the campfire because it dipped down to way below 30 degrees and everyone has once again earned their Polar Bear Badge. They always come out for this breakfast. (Just as long as I am there to cook it)
