This is one I came up with this year for beers in the yard while visiting with friends. Every one says it's a winner.
Brown 1 lb ground venison, use 2T EV olive oil, no seasonings - drain and set in fridge to cool
Take the following and dice, I use a random dice, that gives better flavor and texture
10 roma tomatoes
1 medium sweet vidalia onion
2 jalapeno peppers, with or without seeds - to your choice
2 serrano peppers - " "
2 habanero peppers - if you can stand them that is
2 avacados peeled n pitted
combine all the diced stuff in a large glass bowl and mix well, add the juice from one lime, and 1 T salt
mix again very well. Refrigerate
add the ground venison and the mix to gether and mix again, refrigerate
We use this for burritos and tacos, and just for dipping chips into. Sometimes I add less peppers - if anyones a sissy, sometimes more. One things for sure, it never is enough. Last time I made a triple batch for 6 guys and 4 wifes, 4 kids, and 3 gallons of the stuff was ate up before we got finished.
I use my organic grown Bhut Jolokia and Red Savina habanero peppers, first and second hottest in the world, but the lime juice and salt makes em almost tolerable heheheheh
