I am looking for a chipped beef recipe I can use on venison. A friend took a hind quarter to Pennsylvania and had it done in chipped beef. It was great but this year I was the only one who had a couple of qtrs. so they did not take any be processed in this method. Can anyone send me in the right direction. I would like to be able to do this salt curing or whatever the procedure is myself. Any help would be appreciated. Thx. Somers Long
