Brent, I have been eating them since before I got out of high school. Many nights I can remember catching them for bait then end up finding a can and making a fire and eating them. Best was when I worked at a fish hatchery (lived at the hatchery but main job was assisting the district fisheries biologist). We would take a pond down and it would be full of crawdads. We would gather up a couple of five gallon buckets full and place them in a horse trough with fresh water running through it. A little food (dead fish) and a few days later we would set a pot to boil and have some "soda pop with froth on top" for a Friday meal. Try one of the shrimp boils you can get to season the water. They say to "suck the heads and shuck the tails." I dissected too many to suck the heads!

From New Orleans----eat them a lot. We like them mixed with potatoes, corn, sausage or hotdogs for the kids, onion, whole garlic, celery and whole fresh mushrooms. Here is a small table full. Have seen kids pools the kind for the backyard full. Crawfish (http://whatscookingamerica.net/Seafood/PouringCrawfish3.jpg)

Yes they make a great meal dip them in melted butter and you have meal fit for a king. But you have to get a mess of them to get a belly full.

All right! That's it! I'm staying away from this outdoor cooking section! My mouth is watering so bad that I'm about to drown!
