I'm planning a big fish fry for next week and I'm curious what everyone thinks is the tastiest and easiest way to cook fish while camping. It's gonna be a big group so it needs to be fairly generic so everyone can eat it. Any special recipes or styles out there?

We always roll our trout in a flour/cornmeal mixture with salt and pepper and fry in oil. Serve with cornbread, lemon and a veggie and/or salad. I am sure you can add any spices you desire. We just kept it simple. I have a great salmon recipe but the prep time on the accompanying salsa may not be good for camping as it needs to be prepared fresh.

Most of my cooking is at home in the oven for fish, or the deep fat fryer, not on the grill or over a fire so I can't help you out with any camping recipes. I can tell you that what ever you cook it will taste 3 time better camping then it does at your house. Everything is like that. You try to cook the same thing at home and it never tastes as good.

A quick coating mix for a lot of species of fish is Zatarins. There is a seasoned and an unseasoned mix. If you use the seasoned - DO NOT put any more seasoning in it! Use both. I agree with the cornbread. Grandma and mom both always said to have some soft bread with fish - in case of bones. Maybe camping I would go with a slice of Italian or French bread. Flatcoat

when i cook shore lunch or in the kitchen i DO NOT use any coating at all. i use veg. oil in a castiron skillet about an 1 1/2 inches or so. i lay walleye fillets in till golden brown on one side fip and do the same on the other side. i do orieda steak fries the same way. for shore lunch i use bushs baked beans, at home i make my own. always clean plates. good luck with your fish fry any way you make them will be just fine. now i'm hungry
have a great time

Gary Roach breading is great. I like an egg dip before breading. Any commercial breading or one you mix up will work. I like to go in the egg then breading and then a rest to let it soak in before another trip through the breading then fry until light brown and crisp.
I sometimes take equal parts flour, corn meal, and commercial breading and use that.
Simply flour seasoned to your taste will work. I like to add Emerils cajun seasoning that I make from the recipe on FoodTV.com
Google for recipes and you will come up with a bunch
Here are some to start with:

simple, gut and roast marshmellow style over a campfire. really good if you find some hickory laying around but oak is pretty tasty to no pine except cedar.
tinfoil: make a pouch whole or 2 piecesof fish. sandwitch a piece of jerkey between or inside the cavity cover or stuff with trailmix minus any candy. add liguid of choice. my favorites are beer soysauce hard lemonade nad just water. toss the packet in or by the fire. really you can shove anything you love in the pouch. i've even had fresh blueberry turnip blackberry i gathered up in the woods
thoes two are good for a few people or finicky eaters. on the upside everyone cooks there own.
fry: 1/2 and 1/2 flour and cornmeal. salt peper to taste. add cajun or red peper flakes to taste. i like mine real hot so i make a no heat normal heat and daves special bredding.
pan fry: butter only served with lemon and cilantro i might add sliced garlic or fresh chives to the pan. wild chives(onion) if i can find and reliably i.d. it.
for lots of people deep fried is the best and easyest of you do the cooking methods. as you can toss everything into the oil. taters squash zucchini onion
