I was just wondering if anyone had any rabbit recipes that they might like to share? Thanks, Mike

Have u tryied rabbit TAQUITOS!!
here u go debonethe critter boil the meat add a tsp of salt if u want a lil cruncher meat simmer it until
meat is golden brown. pack of corn tortillas white or yellow will work .
add acup of veg oil in frying pan or pot and heat to 150 to 200 degrees ,maintain temp for as long as u need.when u put the tortillas in the oil as soon as the tortilla bubbels or rise's take out dry off extra oil
put meat in tortilla roll up and add back to preheated oil for a min to 2min. take out stand the taquitos
up in a bowl to allow oil to drain off ( put paper towls on the bottom to soak up extra oil) after your all done. use store bought salsa or make your own .

BBQ ONLY!! marinaded if ya like but ya gotta go with mixture of red/green Chili a NM thing? when i lived in Arkansas i consumed quite a lot of unusual game but rabbit was on top of my list, great on the BBQ!!

If you have a nice young rabbit or two how about a little fried rabbit with mashed potatoes and rabbit gravy. Just quarter the rabbit. Heat up a little shortening in the old iron skillet (see posts about iron skillets. If you cook you should have at least one). Dredge the rabbit in some flour that has been seasoned with a little salt and pepper. Place the rabbit in the skillet and cook until done. (The backstrap and back legs take longest, belly meat (I love that part) takes the least.) Place the cooked meat on a paper towel to drain. Using the grease and drippings from the rabbit, place enough flour in the skillet to soak up the oil/grease (if there is too much grease just remove a little bit). Stir well to get the bits and pieces off the bottom of the pan. Pour in some milk - turn down heat and allow to thicken. It is easier to add milk than to take it away. Sean if necessay and serve over mashed potatoes. Flatcoat

Toss in a large ziplock with some "shake and bake", and then well - shake and bake them.

I also like them marinated in speedie sauce and grilled.

It's been a good while since I did any bunny blasting, but I do remember using Shake-N-Bake for rabbits. Turned out just like you'd S & B chicken or poke chops and was pretty darn good. I'm sure you can get pretty dang creative with any recipe; adding a little fire or Tabasco to a marinade certainly gives it a kick.

deep fried quarters here. in a 70/30 flour cornmeal mix with some fresh ground dried ancho added to taste salt the meat directly myself lightly and ensures proper salt coverage.

the fresh chili is simply take a dried chili i like ancho but poblano mexian or such tie(sp) ar small and since you have to grind the seads unless you work real hard at it are slightly bitter some like bitter though so for bitter leave the seeds in.

chop off the stem and empty the seeds. use a skillet or pan to heat the pepper you'll know when its ready from the smell if you cant smell just till its hot. toss it in a grinder (cheep coffee grinder works best) till it's powder (dont open it to check wait about 30 seconds otherwise you'll pepper spray yourself) also use this to make my own chili powder step up to 3+ peppers sometimes mix varities (got the ide from alton brown and decided fresh ground chillies would be good anyware i use chili powder seasoning)

i also marinate deboned in soy sauce or teriaky and one onion. then stirfry add marinade back in stew for a few min (if you have the wok with a fire ring you can steam the veggies at this time over the stewing meat.) add 1/2 cup water with some corn starch. add in carrot, watercrest, snowpea, head of cabbage, and other veggies if you want all steamed. mix together and heat for a min or two. serve hot over rice.

also do duck and goose these ways along with unseasoned grill and BBQ with mauls.
