Chavez, you've been watching too many License To Grill episodes on the boob tube.
Oh, back to the original question.....certainly a pork shoulder or beef brisket smoked for about 12 hours with a really vinegary mop sauce.

For BBQ, my personal fav is Pork ribs or whole hog. All with sauce. Of-course, thats probably just because of were I live. I don't mind dry, but if the sauce is good then slop it on. Not a huge vinager fan either. I like it sweet with a little spice. Now as for grilling, a nice Porterhouse cooked medium rare with some garlic (lots) and season salt (Not too much) is hard to beat.

Well guys im from the south so i love some good BBQ. MY fav thing to throw on some good hot coals is a nice slab of pork ribs and let them cook awhile with a good tasty dry rub, then throw on some sauce, not to much and not to little. I like chicken cut in half over some hickory chips soaked in beer (I prefer Budweiser). I like a nice pork tenderloin injected with some nice marinate (homemade). even go as far as to put dry rub on it also. Now my fav thing to throw on the grill is hands down a T- Bone steak right at an 1 1/2" thick cooked to med. rare and a little season and its good to go.

I like chicken and ribs to BBQ. I like a tomato type sauce as well. My father in law adds all kinds of stuff to his prefered Kraft hickory bbq sauce. I believe he adds msg, cummin, pepsi, and others I can't remember. I do mine wet,no rubs.I throw it on the grill like it is,add the sauce later.

Pork shoulder slow smoked about 20 hours or so...Shread it, cover it in a vinegar carolina sauce, serve on a bun, you simply cannot beat it. I also let people put on sweet baby rays BBQ sauce if they want it. Oh and I always use pecan wood for smoking, just like the mild flavor.

Has anyone cooked wild meat low and slow? I was watching a hunting show and they were hunting deer and hogs. It sounded interesting, and I wondered if wild hog would taste different BBQed then what domesicated did. Has anyone Qed up some birds either like pheasant?

I'll tell you what not to BBQ: Venison Ribs
My uncle has a knack for cooking/grilling/stewing/BBQing some of the most disgusting things. Don't get me wrong, I love wild game, but those ribs are disgusting. Very gelatin consistency.
My favorite has to be BBQ venison tenderloins, wet sauce, with a homemade marinade. Garlic, soy, honey, onion, vinegar, teriyaki, little sugar. Melts in your mouth!!! Will give you the actual recipe if anyone wants it. Let me know.

When it comes to prime cuts, e.i. Venison tenderloin, Porterhouse steaks, lobster tail, etc. I prefer not to BBQ, but rather a quick hot grill. I like my red meat very rare, with minimal spice, with the exception of pepper and garlic. Happy Happy
