Do you guys make your jerky out of hamburger or just cut strips? I read an article yesterday on making hamburger jerky and i guess it is supposed to turn out just like regular jerky.

I grind mine into burger and then use a jerky gun....its a lot easier to eat!! Doesn't pull your teeth out trying to bite it. I like it better this way...you can still make it into flat or round strips....

We have done both. Overall I like the regular, strip jerky. Buckgitter is correct, it pulls on your teeth less using a jerky gun. I found my old jerky recipe and I will try and post it soon.

How do you guys cook it? do you smoke it or use the oven/dehydrator?

We use a dehydrator. Pretty easy, just follow the directions. Just don't let it go overnight (learned that by experience. It was dry - REAL DRY. Powdered jerky strips are not "Good Eats.")

ground is ok but just not authentic to me,I use a dehydrater myself,kids eat it faster than I can make it !

The gun is the way to go. Everything on my deer that isn't a backstrap or a tenderloin gets ground, packaged, and frozen. I use the burger for chili, burgers, other recipes, and it's always handy for jerky. I agree with the "not overnight" thing. You have to keep checking the dehydrator periodically. I usually start with 6# of burger and it takes between 5-6 hours. You can always leave it in a little longer, sometimes just 15 minutes makes a huge difference. I hate it when I go too long and it gets dry. It's waaaaay too much work to screw it up.
