Does any have or would like to share a sausage recipe??

We've tried our own sausage recipe's with limited success. usually the wild game is just too lean, and if you use enough pork fat to get nice sausage, you end up not getting the real flavor of the base meat. But I did find a great seasoning pouch that works for Venison. It's called backwoods sausage kit. It comes in a little burlap sack, has fiber casings, and seasoning pouches for 25lbs of meat. This stuff was incredible. The sausage tasted great, and wasn't overpowered by the pork fat. Otherwise, don't look too hard into trying to make someone elses recipe. That's the beuty of sausage. Put what you want into it, and call it YOUR sausage. I use my dads BBQ rub, and some cure powder. That works out just fine.
Try to use a pretty well spiced recipe. Personally I like a Polish or Hungarian style recipe. Garlic is your friend.

spokane spice company has gobbs of sausage mixes, I make polish, brats, germans, breakfast, hot beer is my favorite. I get all the seasoning and casings there. I add 2-3 lbs of pork shoulder to 7-10 lbs of elk or deer and have nice results.
