Boys...I had the best tasting burger the other day!! A local butcher is making deer burger by adding bacon scraps....The burgers taste just like a bacon burger ...no game taste at all. I love deer meat but I have to be in the mood for deer burger...this taste puts me in the mood much more often now!! I will pick up 144 burgers today from 4 hams!! Grillin time!

I am not sure if this will help but I have some people around that think deer burgers taste a little gamey. I add onion soup mix to the burger before I make the patties. That usually turns out great. I also add a few strips of bacon and chedder cheese (or yellow american in a pinch. I can eat those burgers all day long.

If you want to get the gamey taste out of your venison burger, have the butcher grind in 15-20% beef fat. It makes a nice burger that won't be dry, and it makes browning it for spaghetti or tacos easy because it cooks more evenly. A buddy of mine has always bought a Boston Butt and ground that up in his venison, and it's a great flavor, for sure, as well.

Not that moose is gamey, but one thing I have done in the past was to skip the beef fat and just have 20% beef hamburg added in. Moose meat doesn't stick together well for making burgers. Its a little more expencive to add regular 85% lean hamburger to the meat but I liked it over just beef fat being added. Another trick I learned to make burgers stick together was to add an egg or two into the meat just before you cook it.

Just plain venison burger here no addatives other than ,add some garlic salt,pepper and a splash or 2 of soy,or worchestshire(is it spelled right?) LOL and on the grill till done to your liking !MMMMMMMMM
